good people doing good things
Minnesota is one of the largest producers of dry beans in the country (if you eat a dark red kidney bean the chances are 9 out of 10 that it came from MN). But it is maddeningly difficult to find heritage beans in this land of beans. Fortunately we have Paula Foreman of Encore Farms who grows beans organically with no fossil fuels and who seeks beauty and flavor in her beans, over yield and profit. She works hard but sells out every single year. In this photo are a few examples of how spectacular and jewel-like a humble dry bean can be when you care, and then do all the right things. Thank you Paula for being part of the solution in this world full of problems.

Sorry for this, but I cannot resist- I little song I learned in first grade: Beans beans the musical fruit, the more you eat the more you toot . We would roll on the floor in laughter.
