did you know?

did you know that those big  pendant magenta flowers that hang from banana clusters were edible themselves? neither did i. they slowly peel open like an endive, and between the leaves there are little florets that are edible once they have been soaked to remove their bitterness. the florets are what you see in cross section in this photo. the process sounds incredibly labor intensive, so i don’t know if i will ever eat banana flower florets, but i’m awfully glad this project introduced them to me!
